A Healthful Snack

I love Lara bars. They make tasty, whole, nutritious snacks for any time, especially when I get hungry between breakfast and morning ballet class. I tried making my own based on these recipes. This is a more autumn-y version of my favorite, "Cashew Cookie". I'll call it the "Cozy Cookie Bar". Here is the recipe, it makes 6: 

For Cozy Cookie Bars you will need:

  • food processor
  • 1 9-by-5-inch loaf pan, plastic wrap, and a little oil for greasing
  • 1 cup raw, unsalted cashews
  • 1 1/4 cup Medjool dates
  • 1 cup warm water
  • 1 tablespoon flax seeds
  • 1/2 teaspoon vanilla extract
  • 1/4 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 1/4 teaspoon almond extract
  • 1/8 teaspoon salt

Directions:

Step 1: Remove the date pits.

Step 2: Soak dates and cashews in warm water for 5-10 minutes.

Step 3: While dates and nuts are soaking, line loaf pan with plastic wrap and brush lightly with oil.

Step 4: Drain cashews and dates and add to food processor along with the remaining ingredients.

Step 5: Pulse until you have a nice sticky "dough".

Step 6: Place "dough" in pan, cover with another layer of plastic wrap, and press flat. Refrigerate for at least 30 minutes.

You can add all kinds of ingredients to customize your own bars but you really only need the dates and cashews. Just mix 'em together and blend to make a lovely and flavorful snack.

P.S. I don't actually recommend storing these in your back pocket. That's very silly and will probably not end well for the bar or your pants.
