A bright juice for dark days

It's barely February and the days are still short. So short that I find myself scrambling, camera in hand, to catch the last bit of natural light as it fades from my apartment by mid-afternoon. These days leave me yearning for large unblocked windows and bike rides along the lake. My skin craves the sun and my soul craves the communal celebration that is summer in Chicago.

But alas, winter is in full swing and I must make the best of it. Most mornings I wake up and make a fresh juice right away. The fruits and vegetables have kept me cold-free so far and the fresh happy colors make me feel resilient and optimistic. Here is one of my favorites.

Pear Apple Green Juice

  • 2 pears
  • 1 apple
  • 1 cucumber
  • about 5 stalks celery
  • 2 or 3 handfuls of spinach
  • 1/2 inch piece of ginger
